Roast Potatoes

Recipe from Moffat Family

This is how we make our roast potatoes.


  • Maris Piper or King Edward potatoes - as many as you need.
  • Ground Black Pepper
  • Ground Sea Salt
  • Olive Oil
  • Fresh Rosemary


  1. Preheat your oven to 190C/375F/Gas 5.
  2. Parboil the potatoes in lightly salted water for between 7-8 minutes until almost cooked (they will still feel firm when pierced with a knife). Drain the potatoes thoroughly using a colander, then shake the potatoes around a little in the colander until the outsides become fluffy.
  3. Place the potatoes into an oven tray and drizzle with olive oil. Shake the potatoes around ensuring that each and every potato has a coating of oil.
  4. Once coated in oil, sprinkle the potatoes with ground black pepper and sea salt. At this point you can add some chopped fresh rosemary (if you like the flavour).
  5. Bake in the oven for 45-60 minutes - until golden brown and crispy.
